Wine Tasting Notes

2021 Black Label Shiraz

Full bodied with notes of dark plums, cherries and a black pepper spice. Subtle mint aroma on the nose. Smooth tannins with a long lingering finish.

Method

1
Preheat the oven to 160°C. Place a medium sized cake tin, half filled with cold water on the bottom of oven. This will create steam while the lamb cooks preventing it from drying out.
2
Cut lamb into approximately 5cm pieces, trimming off any additional fat. Place into a roasting tray.
3
Add chopped garlic, onion, tomatoes, parsley, sage, rosemary, chilli, salt and pepper. Pour in the olive oil, red wine and water. Rub the herbs and oil into the lamb
4
Mix breadcrumbs and parmesan together in a bowl. Sprinkle over the top of the lamb, this will create a nice crust.
5
Roast in the oven for approximately 90 – 105 minutes until the lamb is tender and cooked with a nice golden crust on top.
6
Pour the cooking juices into a small saucepan and bring to a boil. Whisk in cold butter to give it a glossy finish.
7
Serve with your favourite sides. We suggest creamy mash potato, seasonal vegetables such as broccolini, asparagus, baby carrots or green beans.
8
Pair with a bottle of our new release Balgownie Estate 2021 Black Label Shiraz.
